Classical Tridoshic Kitchari: The 3-Day Reset

Split yellow mung and Basmati rice are the cornerstone of Ayurvedic restorative therapy. Mung digests easily without gas; Basmati soothes the tract. Cooked with ghee and spices into a porridge-like pot, kitchari nourishes while resting digestion.

    Rinse soaked mung and Basmati together until the water runs clear.

    Heat ghee; add cumin, mustard, grated ginger, and hing until seeds crackle.

    Stir in turmeric, then rice and mung for 1 minute so every grain is coated.

    Add 4–5 cups water and ½ tsp pink salt. Simmer 30–40 minutes (or 10–12 in a pressure cooker) until soft.

Commercial breads often rely on chemical yeast, maida, and preservatives that create heaviness and Ama. Classical rotis are unfermented, unleavened, freshly prepared, and served hot.

  • Ingredients: 1 cup pitted Medjool dates, ½ cup soaked peeled almonds, 1 tbsp A2 ghee, ½ tsp cardamom, pinch of saffron, pinch of nutmeg
  • Method: Blend dates and almonds to a dough. Warm ghee; stir the mixture 2 minutes. Cool slightly; roll into laddoos. Store in a glass jar.
